Lentil as liver

Missy says that easy recipe is the best recipe, and this one of “fake” liver paté is no exception.

I was really looking forward to try this with some modifications from Missy so we held off posting it as it looks super easy but she still isn’t back to her full self yet. And it didn’t help that I also got tummy ache, and was very poorly for a day either…

But, enough of our troubles, let’s have a look at this recipe and see what you all think.

Lentil as liver paté 
1 1/2 cups green or brown lentils

Soak overnight, cook for 5 mins. We have canned lentil so won't need soaking.

1 cup walnuts, chopped finely

To have a smoother texture, we'll use walnut cream instead.

3 Tablespoons vegetable extra virgin olive oil
3 large onions, chopped, and sautéed until caramelized and browned

Thinking of using chutney because caramelising onions sounds above Missy's cooking level...

4 hard boiled eggs, chopped well

The recipe says to mix all ingredients with salt & pepper, simple enough. If the mixture seems dry, add a bit more oil.
